The Art of Caramelle with Chef Jimmy of Pammy’s *In-Person* *NEW*

Caramelle, a charming and quirky pasta from Italy’s Emilia-Romagna region - a beacon of Italian gastronomy - is as delightful to make as it is to eat. Aptly named after its resemblance to wrapped candies ("caramelle" means "candies" in Italian), the pasta is a feast for both the eyes and the palate. In this hands-on, three-hour class, Chef Jimmy Dunne will guide you through the process of making Garnet Yam Caramelle. You'll start by crafting an egg-rich dough, rolling it thin to achieve a delicate yet resilient texture. Then, you'll fill each piece with a silky, sweet puree of baby garnet yams, enriched with umami-packed miso and balanced with a hint of lime. To complete the dish, you'll learn to prepare a broken brown butter sauce that enhances the pasta's deep, nutty flavors. To provide a crisp and peppery contrast, the dish will be finished with a simple salad of fresh red watercress.
